Watermelon Spritzer with Lime and Mint

This watermelon spritzer with lime and mint is a real treat to drink in the hot summer months. It's equal parts sweet, citrusy and minty, and altogether refreshingly fizzy!

Enjoying watermelon is a delicious part of summer living, and it's reassuring to know that it is also good for you! And nothing quenches my thirst more on a hot summer's day than an icy cold fizzy drink. So, really, this watermelon spritzer was a no brainer - the perfect summer spritzer. Add a twist of fresh lime juice to cut through the watermelon's sweetness and some fresh mint leaves to cool and refresh.

I find watermelon juice sweet enough on its own, so I add sparkling mineral water to my watermelon spritzer. But if you like a bit more sweetness to your drinks, feel free to use tonic water or lemonade (as in, the flavoured fizzy soft drinks similar to 7-UP or Sprite and not the sweetened lemon juice variety). Highball glasses work well for this drink, as they hold a good amount of liquid (after ice) and have a nice and elegant shape.

And no need to keep this alcohol free, either. If you're celebrating, why not add some prosecco to your spritzer? Or reduce the watermelon mixture and add your favourite white wine? Or really go all out, and use it as a mixer for your favourite spirit? There are endless ways to customise this drink to make it yours. Garnish with your choice of brightly coloured fruit - I love the contrast of deep blueberry skins against the vibrant watermelon. Pop in a reusable bamboo straw to double up as a stirrer for a finishing touch.

If fizz is not your thing, you could skip it altogether and simply serve this as a watermelon smoothie - equally gorgeous, tasty and refreshing. And two thumbs up from the children!

Here's what you'll need to make this watermelon spritzer:

800g watermelon flesh
2-3 Tbsp lime juice
2 limes, sliced, plus extra slices for garnish
Bunch of mint leaves, rinsed, plus extra for garnish
300ml sparkling mineral water [1]
Ice cubes or crushed ice
Blueberries for garnish (optional)

And here's what you'll need to do:

  • Wash the watermelon, and chop the flesh into chunks, placing it in the jug of your blender.
  • Juice and slice the limes.
  • Blend the watermelon until it becomes a smooth and uniform liquid.
  • Add the lime juice, and blend briefly to combine.
  • Fill a highball glass approximately 1/3 - 1/2 full of ice.
  • Grab 4-5 mint leaves per glass, and twist them gently between your fingers to release their oils and aroma. Add them to the glass, along with a couple of lime slices.
  • For each drink, pour in approximately 200ml of the watermelon mixture, and top up with approximately 70ml of sparkling water or other fizz.
  • Give everything a quick stir (we love our reusable bamboo straws!).
  • Garnish with a slice a lime, a sprig of mint and some blueberries, if liked.
