These gluten free almond biscuits are adorable, packed with almond goodness, and full of nutty flavour with a hint of citrus. They make a great festive treat and are super easy to make - we love them!

But did you know that almonds, one of the more popular nuts around, are not actually nuts at all? The part that we eat is actually a seed, and almonds are technically stone fruits, like their close cousins, peaches and apricots.

Almonds are full of nutritional benefits, and ounce for ounce, provide more fibre and minerals than other tree nuts. They are also beneficial fo heart health and can help to reduce cholesterol levels and the risk of heart disease.

These cute little gluten free almond biscuits use only ground almonds and no wheat flour at all, so they are naturally gluten free, nicely dense and packed with protein and fibre, instead of 'empty calories'. How many biscuits can do that for you? They are a favourite with the family and you don't even need to feel guilty when the children ask for more!

The fruity and nutty combination of these biscuits makes them an ideal winter festive treat, but I could definitely eat these all year round! They are perfect as a quick snack or for enjoying with your afternoon tea. And with only four ingredients and half an hour's time commitment, it really couldn't be easier.


Here's what you'll need to make these gluten free almond biscuits:

200g ground almonds (almond flour) [1]
75g caster sugar
Zest of 1 lemon
1 medium egg (~50g), beaten
Whole almonds to decorate

And here's what you'll need to do:

  • Preheat the over to 170C (340F) / 150C Fan, and line a baking sheet with parchment.
  • Put the ground almonds, sugar and lemon zest into a mixing bowl, and stir together and well combined.
  • Make a well in the centre of the almond mixture, and pour in the beaten egg.
  • Mix together with an electric whisk until everything starts to clump together and form a ball of dough.
  • Scoop about a tablespoon of dough, roll it into a ball between your hands, and place it on the lined baking sheet. Repeat until all the dough is used, you should have approximately 20 balls.
  • Press a whole almond into the centre of each ball.
  • Bake in the preheated oven for 15 minutes.
  • Cool for a few minutes on the baking sheet, then remove to a wire rack to cool completely before serving. Keep in a tightly sealed container for up to a week.

Notes

  1. If you can't find ground almonds readily available, you can grind your own in a food processor using blanched almonds, almond slivers or flaked almonds.
