Chocolate covered marzipan is the happy byproduct of clearing out my cupboards, and I'm pleased to report that it is deliciously decadent and couldn't be easier to make - we all love it!
Chocolate covered marzipan is usually something you think of as coming in a commercially packaged box of chocolates. But when I found myself with both marzipan and chocolate going spare, I decided to turn them into a quick fix treat.
You might wonder why you'd want to make these easy treats at home, when buying them from the shops would be so much more convenient. But the honest truth is that homemade chocolate covered marzipan tastes so much better! And really, it's not very much effort to make, at all.
The key to making the best tasting chocolate covered marzipan is choosing high quality ingredients. I use marzipan containing 63% almonds, which makes all the difference - each bite is full of nutty almond flavour. And of course, choose your favourite chocolate to cover the marzipan with - as usual, my preference is 70% cocoa dark chocolate. If you're feeling fancy, you can top them with some drizzled white chocolate or crushed almonds.
We love homemade chocolate covered marzipan so much that I will now specially purchase the marzipan and chocolate to make it! As you can probably imagine, this doesn't last long in our house, but if you needed to make chocolate covered marzipan in advance, it will keep for a couple of weeks in the fridge in a sealed container.
